This is a great soup to make when you are needing more fat and nourishment on your cleanse. If you are craving meat, you can also add chicken to this soup to keep you going. This soup is one of my favorites for those cold winter days.
-3 chopped zucchini
-3 chopped carrots
-5 fingerling potatoes
-1 can low-fat coconut milk
-1 cup of quinoa
-bundles of sage, rosemary & thyme (tied together with twine)
Fill pot with 10 cups of water and bring to boil with herbs, carrots, potatoes and celery and simmer. After 20 min add mushrooms,zucchini, and quinoa. Cook for 10-15 more minutes. Remove herbs and stir in coconut milk.
